Samsung wins reconsideration of Galaxy Tab sales ban

SAN FRANCISCO (Reuters) - A U.S. appeals court ruled on Friday that a lower court should reconsider a sales ban against Samsung's Galaxy Tab 10.1 won by Apple in a patent dispute with the South Korean electronics maker.

The injunction was put in place ahead of a month-long trial that pitted iPhone maker Apple Inc against Samsung Electronics Co Ltd in a closely watched legal battle that ended with a resounding victory for Apple last month on many of its patent violation claims.

However, the jury found that Samsung had not violated the patent that was the basis for the tablet injunction and Samsung argued the sales ban should be lifted. U.S. District Judge Lucy Koh said she could not act because Samsung had already appealed.

In its ruling on Friday, the Federal U.S. Circuit Court of Appeals in Washington said Koh could now consider the issue.

The decision comes just a month before the South Korean corporation is expected to unveil the second generation of one of its most successful devices, the stylus-equipped Note.

The Galaxy 10.1 is an older model, but the ban still hurts Samsung in the run-up to the pivotal holiday shopping season.

The world's top two smartphone makers are locked in patent disputes in 10 countries as they vie to dominate the lucrative market, which is growing rapidly.

A U.S. jury found during the just-concluded trial that Samsung had copied critical features of the iPhone and iPad and awarded Apple $1.05 billion in damages.

iOS 6 Maps vs. iOS 5 Maps vs. maps.google.com: Location data shootout!

iOS 6 Maps vs. iOS 5 Maps vs. maps.google.com: Maps apps for iPhone shootout!

iOS 6 removed the Google-powered Maps app that launched alongside the original iPhone in 2007 and replaced it with new Maps app and location services more fully under Apple's control. That's means iOS 6 got features like turn-by-turn navigation, vector-based maps, and Flyover, but lost features like built-in transit directions and StreetView. It also means the quality of the location data changed drastically for many users. While this was hardly unexpected, reaction has varied from "beautiful and perfectly usable" to "dreadful and a deal-breaker."

Recognizing that Apple's new location data, licensed from TomTom and others, seems to vary in quality considerably from place to place, with big, populous American cities tending to be much better than small, rural, international areas, iMore still wanted to put them to a test.

So I got in the car and drove for nearly 6 hours and did just that. Here are the results.

iOS 6 Maps vs. iOS 5 Maps vs. maps.google.com: Interface & ease of use

Maps under iOS 6 isn't too much different than the design and feel of what users already had under iOS 5. Upon launching the app you'll be presented with a map of your current location. Along the top you've got a directions button, a search bar, and a link to your contacts so you can get directions to any address for any contact.

When it comes to viewing a map and customizing the views you'll see two buttons in the lower left hand corner. The first is to automatically find your current location. You can tap it twice to use the built in compass to see what direction you're facing. The next button labeled "3D" allows you to enable or disable a 3D rendering of the map on the screen.

In the lower right hand corner you can tap on the page curl in order to customize view options even further. You've got three main map types which are standard, hybrid, and satellite. Standard will give you a drawn out view of maps with streets and other markings clearly labeled. Hybrid gives you an actual live view of what you're looking at along with street labels and other information. Satellite will leave out labels and only give you a live view.

At anytime during navigation you can choose the list icon in the bottom left to view all the directions along your route. Once you start a route it'll automatically activate voice navigation via Siri. You can close out of the app, lock your iPhone, play music, or go about whatever you were doing and Maps will still keep track of directions for you. You'll see your route on the Lock screen and any directions will be announced as they happen via Siri.

iOS 5 Maps is extremely similar when it comes to interface. You will however notice some features in iOS 5 Maps that are blatantly missing in iOS 6 maps such as transit and walking directions.

iOS 5 Maps has two main views and you can toggle between them along the bottom of the screen. They are search and directions. You can also choose the arrow icon in the lower left corner to locate yourself at any time. Under search you can type in the name of any place or city and see it on a map. You can also choose the blue Address Book button to access your contacts and choose a destination that way. If you know the address or place you need to get to, you can type in directions manually as well.

Similar to iOS 6 maps, tapping on the page curl in the bottom right will allow you to view traffic and switch between map view. iOS 5 Maps supports the same kind of maps iOS 6 maps does but adds the list option for list directions. You have this feature under iOS 6 maps as well but it's just moved to the main map view instead of being tucked inside the settings section.

If you're on iOS 6 and aren't happy with the updated Maps app, you still have the option of going to maps.google.com from your Safari browser, bookmarking it on your Home screen, and using that instead. While the interface is different, you'll get all the same map data that Google offered in the iOS 5 Maps app.

Along the top you've got the option to search for a destination, locate yourself, and more. The web version of Google Maps will also give you the option to choose between driving directions, transit info, walking directions, and bicycle routes.

After pulling up driving directions, maps.google.com will give you the different choices in routes to choose from just like iOS 6 Maps and iOS 5 maps do. Once you choose one you can immediately start. Google will track your location just like it would in the native Maps app but you'll have to make sure Safari stays running or you don't navigate away from the page by mistake.

After choosing a route you can view a list of instructions directly underneath it. Tapping the maps icon at the top will give you a map view of the route. In my experience, maps.google.com is much choppier via Safari than both iOS 5 and iOS 6 Maps. Sometimes pressing on a button via the web version wouldn't always work or didn't seem very self explanatory.

When it comes to user interface and ease of use, both Maps under iOS 6 and iOS 5 are easy to use and extremely alike design wise. The web version of Google Maps is choppy and doesn't seem to display data as quickly and efficiently as either iOS 6 Maps or iOS 5 Maps.

iOS Maps vs. iOS 5 Maps vs. maps.google.com: Directions

When entering directions into iOS 6 Maps, iOS 5 Maps, and maps.google.com, most of the time, all three apps would present you with the same suggested routes. They also typically showed the same amount of travel time within minutes of each other.

iOS 6 Maps works very much like iOS 5 maps. Just search for a location and get driving or walking directions from your current location or manually type in a from and to address and iOS 6 Maps will give you directions. If there are several routes to choose from it'll show you a map view of each route. You can then tap each route and view the distance and time as well as a list view of the directions. Once you've found the route you'd like to take you can tap the Route button and you'll be on your way. Voice navigation will commence and you can close out of the maps app. Siri will then notify you when you've got a turn or other direction coming up. Anytime you want to view the directions you can tap the turn arrow in the upper left hand corner of iOS 6 Maps in order to view the directions from start to end.

iOS 6 Maps directions differences

One thing I did find interesting with iOS 6 Maps is that it doesn't always produce the same results each time. You can see above that when I searched for the same location on two separate iOS 6 Map apps on two different devices, the map data looks different on both. I wasn't able to figure out why that is and each time I searched for a location it would show different side streets than the last time I searched.

iOS 5 Maps works the same way iOS 6 maps does but is more robust. You can not only find driving and walking directions but information as well. Anyone who's ever been in a big city they're unfamiliar with knows how important transit directions can be. When you don't have a car, they're a pretty big deal.

Once you've chosen the type of directions you want, you can either locate yourself and choose a location from there or manually type in directions. Once you're done you can tap the Route button and just like with iOS 6 maps, you'll be given several routes to choose from. Tap one to choose it and you'll be given directions along the top of the screen.

Since iOS 5 Maps doesn't support voice navigation you'll only have the option to use regular navigation. Once you've completed a step you can tap the Next button to view the next step. When it comes to driving, voice navigation is definitely a better option and before iOS 6 Maps, there were several third party GPS apps that helped fill in the gap.

Even though you don't have voice navigation, iOS 5 Maps contain much more robust data when it comes to the actual maps you're viewing than that of iOS 6. If you're trying to obtain directions in a rural area, you may not see side streets or other kinds of data in the Maps app under iOS 6 that is present under iOS 5 using Google Maps. That will be a problem for many users.

If you're on iOS 6, maps.google.com makes a good fallback for when iOS 6 Maps isn't giving you the data you need. Since it pulls the same data as the iOS 5 Maps app, you'll get much better mapping data to work with. Again, it would be voice navigation or turn-by-turn directions but you'll see a much clearer picture and in some cases, better directions, than what you get with Maps on iOS 6.

When it comes to mapping data, Maps for iOS 5 and maps.google.com contain much more data and are a lot more reliable than Apple's own iOS 6 Maps app when it comes to rural areas. If you live in a well populated area, iOS 6 Maps will still give you the data that you need and get you from point A to point B without a hitch.

iOS 6 Maps vs. iOS 5 Maps vs. maps.google.com: Turn-by-Turn navigation

iOS 6 Maps offers voice navigation and turn-by-turn direction. This is not a feature that is available through either iOS 5 Maps or maps.google.com. If you wanted voice navigation prior to iOS 6, you'd have to rely on a third party app to provide it. Considering some of them can get extremely high in price, it's nice to see Apple providing the feature natively.

Since iOS 6 was released as a beta back in June, I've been using voice navigation rather regularly and have to say I'm quite impressed with the Siri integration and how it works so seamlessly regardless what you're doing on your iPhone. You can run it in the background or view directions and a live map on the Lock screen. Whenever you're about to come up on a new direction, Siri will re-iterate the direction to you. If you've got music playing through your Music app, the music will simply fade out and Siri will provide the direction, then the music will fade back in.

When using turn-by-turn and voice navigation, you aren't typically starting at a map but rather relying on your iPhone to keep you updated and let you know where you're at. When it comes down to it, I've been impressed. I've never gotten myself into a situation where iOS 6 Maps led me in a wrong direction or didn't get me where I needed to go.

When testing locally in my home area that I know well, I did notice that sometimes iOS 6 Maps didn't make the fastest route the top suggestion but it still got me where I needed to go. In rare circumstances, the fastest route I knew wasn't always available but considering they typically involved side streets and directions that may be confusing for people that were not local to the area, I can see why iOS 6 Maps might not bring up a route like this. For users that don't know an area, main streets and fewer turns probably causes less confusion than a route that would have a lot of twists and turns. For simplicity's sake, I get it.

Considering iOS 5 Maps and maps.google.com don't offer turn-by-turn or voice navigation, iOS 6 Maps wins.

iOS 6 Maps vs. iOS 5 Maps vs. maps.google.com: Street View vs Flyover

iOS 6 Maps comes with a new feature Apple is calling Flyover. The premise is that you can see an overhead view of an area on the map and use your fingers to pan in and out as well as rotate the map in a pretty amazing 3D view.

While the feature is pretty neat to look at, it doesn't have much application when it comes to real world use. Sure it's cool to use Flyover to view Chicago or other large cities around the world but besides being a cool feature to show off to your friends, you probably won't ever find yourself using it while driving.

Flyover is also only limited to certain areas right now and they're pretty limited. They currently only include large cities such as San Francisco, Chicago, London, New York City, and some other larger metropolitan areas. There are also times when Flyover shows some pretty wild inaccuracies, as you can see above. I don't remember the Eiffel Tower looking quite like that.

Google has a service that is somewhat similar to Flyover called Street View. While it isn't an overhead view, it provides a street level view of areas. When it's available, you'll get an icon next to a location that shows a red circle with a person inside it. Tapping it in iOS 5 Maps will take you down to street level. From here you can move up and down streets and pan 360 degrees in any direction.

While the iOS 5 Maps app offers Street View, you don't currently have access to it from the maps.google.com site in mobile Safari.

Considering Google has had the better part of a decade to put together Street View, it'll be available in a lot more areas than Flyover. It's also a much more useful feature than Flyover when it comes to practical utility.

iOS 6 Maps vs. iOS 5 Maps vs. maps.google.com: The bottom line

Google had a tremendous head start over Apple when it comes to the mapping business (here's what Google Maps looked like on the PalmOS Treo 680 back in 2007 -- a year before the first iPhone was even released). That's obvious when comparing map data between iOS 6 Maps and iOS 5 Maps. Apple probably could have avoided a lot of the negative backlash over iOS 6 Maps if they better set expectations and perhaps released the new Maps with a beta bandaid the way they did Siri. But that's neither here nor there.

If you have an iPhone 5, you have no choice and iOS 6 maps will be your default location service. In my experience, when it comes to practical utility and using the voice navigation in iOS 6 Maps, I've always gotten where I need to go. The addition of turn-by-turn is a spectacular upgrade. The animations are nearly flawless and the out-of-app banners and Lock screen navigation are stellar. In my tests, if I made a wrong turn, iOS 6 Maps would automatically reroute me quickly and accurately. Outlet streets and side streets are not always clearly labeled like they are in iOS 5 Maps but I haven't found it to be something that caused me to lose my way.

The iOS 6 maps themselves are beautifully rendered and the vector illustrations are a huge improvement over iOS 5's bitmap tiles. Flyover is more of a novelty and not a feature that most people will use regularly for mapping, and while StreetView can be as well, seeing was a shop or location looks like at ground level is often more helpful than what it looks like from the clouds.

The loss of transit directions is incredibly inconvenient for those who use them daily. If you happen to have a great transit app in your area, it can mitigate the annoyance, but having to leave Maps for any reason can't be viewed as anything but a regression. Transit apps should be a value add, not a must have.

If you're in a heavily populated U.S. city and there's a great transit app in the App Store that covers your needs, iOS 6 Maps will probably be fine for you, and given the controversy you can be sure Apple is working day and night to make it better.

If you're in other parts of the country or the world where the iOS Map data is poor, maps.google.com and its more robust and reliable data set is a functional alternative and fallback. Web apps are never as good as native apps, but until Google stops enjoying themselves long enough to launch a real Google Maps app into the App Store, it's one of the few ways to complement iOS 6 maps.

If you have a previous iOS device, depend on Maps, and you're on the fence about updating you can stay on iOS 5.1 and keep using iOS 5 maps, but you're probably better off upgrading for a lot of other reasons and checking out third party navigation apps that are more robust than both iOS 5 Maps and iOS 6 Maps.

Having good radio equipment is important for many reasons. What will you do when there is no Internet? What will you do when there is no cellphone service? How will you know what?s going on in other parts of the country, let alone the world? Radio signals don?t need an intermediary, they just bounce all over the earth and are received by radios.

It?s not even necessary that you transmit (speak) on the radio, but the information you can garner from just listening to others from far away is worth the time it takes to understand how to use a radio.

There are many ways to go in purchasing a communications radio, depending on your budget. You can buy yourself a brand new, state-of-the-art Kenwood or I-com for example, both of which are great radios. But the expense can be quite high, typically in the many hundreds of dollars.

A less expensive but just as viable way to go is a ?free band radio?. This is a 10 meter ham radio that has had additional freeband frequencies installed. This will expand coverage to include the 12, 11 (the CB frequency band) and sometimes 9 meter bands. In a converted CB radio, this is called a radio with extra channels.

A 10 meter radio is very common and inexpensive, as well as their low-rent cousins, CB radios. Many can be found on ebay for under $200 and may already have the additional frequencies installed. Also any good SSB (single side band) CB radio can have what they call ?Extra Channels Added? by any good tech. (Lots of mods here?http://www.dxzone.com/tag-cb-mods/.) CB shops at truck stops often times have used free band radios for sale at good prices, but check Ebay for prices on used radios before going.

Any frequency on the radio can be used in various modes, the most common being AM, Single Side Band (SSB), Upper Side Band (USB) and CW. CW means constant wave mode, which is the mode used for Morse Code and RTTY. It is possible to send several and receive multiple pages of text files via RTTY. The software needed can be found here (http://gmfsk.sourceforge.net/?). Radios with a CW mode like the RCI 2950 (et al) and the Uniden HR2510 have the CW mode installed. There are other models that also have CW mode, however no CB radios have CW mode. You can send pictures and text files to others, similar to a fax. This will be an excellent way for the people to maintain contact with others during times of crisis or total collapse.

The legal frequency range of a Citizens Band radio is 26905 megahertz through 27405 megahertz (mostly in 10 kilocycle steps per channel), covering the 40 channels of CB radio. Freebanding is when an unlicensed radio operator uses the non-allocated frequencies in the 11 meter band (CB radio and beyond). When society has collapsed, who care who has a license?

Most freebanders use the Single Side Band (SSB) mode of these channels as opposed to the AM mode. The chatter you may have heard on channel 19 (the truckers channel) is in the AM mode. AM mode of operation is limited in range, however using the SSB mode affords greater range and more output power. A legal CB radio has 4 watts output on the AM band and 12 watts on the SSB band.

This means that when conditions are right (sunspots, etc.) SSB signals can travel greater distances than those in the AM mode. One early morning, while driving west on I-90 in Idaho, I made a contact with Tokyo, Japan using SSB and a HR 2510 Uniden radio. That was a contact of over 7000 miles with less than 20 watts of power.

Once the world goes in to collapse there will still be thousands of people using the freebands. This can be used to create a radio round-robin or?relay?to share information and help others.

The international call frequencies are:

27555 USB The US and the world except for Europe

26285 USB Europe

First a little bit about how to use a call frequency. A call frequency is a frequency on which we make contact with someone who would like to have a conversation with us. The parties then go to another frequency of their choice to continue the conversation. It is unlike the chatter you may have heard on the AM side ? CB Channel 19 and all that noise. The conversation is called a QSO.

First we must wait for a moment of silence to break in and make our call. The protocol for asking for a QSO is like this:

?C-Q, C-Q, NEW MEXICO CALLING AND LISTING ON 27560? is a typical call or CQ (?seek-you?). This tells listeners on the call frequency where to find you to have a conversation. Then we move our frequency dial to that frequency. Once there we make another call like this:

?CQ CQ New Mexico calling for any and all stations.? Or if your are looking to make a contact in a specific place:

?CQ CQ New Mexico Calling for all stations in _____? (the place of your choosing) ?and standing by for contact.?

Antennas

There are many different kinds of viable antennas to use with your radio, some very cheap some very expensive.

Some of you may choose to make a wire antenna. One of the simplest wire antennas is the ?Inverted V? ? very good for long distance communications (what the radio community calls ?skip?). The inverted V can be made for the cost of some wire and a pole.

Others may prefer to purchase something ready made, in a box. For those of you who do, we can strongly suggest the ?V Quad?. This is a directional aluminum antenna that sends a strong signal in only one direction. Like the directional TV antennas of past times, this antenna needs a rotor (this is a motor to turn the antenna from the radio shack or you can use the ?armstrong? method). Either way, when the conditions are right you?ll be talking to the world.

When radio operators say, ?conditions are right? they mean that the skip conditions are good, allowing the radio signals to be received over longer distances than normal. Skip is when the signal travels along a mostly horizontal plane before it eventually hits the ionosphere. Like a flat rock across a lake, the signal will skip along rather than pierce the ionosphere and go out into space. This skip can cause your signal to be received with nearly as much strength as it had when it left your antenna. The contact I had with Tokyo gave me an S10 signal strength, and that is as high as it gets. Sunspots are generally the cause for good skip conditions.

Enzymes: the little molecules that bake bread

When I first began making bread, the science involved was always in the back of my mind. I had an idea of what occurred?my diagram for the chemical reactions in dough looked something like this:

When I started preparing a manual for a bread-making class, however, I really began to wonder about the details. Is the sugar for fermentation part of flour? How exactly does the yeast process this sugar? Do all the complex flavors of bread really come from one organic molecule, ethanol? Numerous trips to the university libraries helped me understand the enzymes involved in making the dough.

When I realized that flour contains a very small amount of sugar, only one to two percent, I thought, ?Wait a minute, how is that possible? That?s not enough to make dough rise.? Then I figured out that the starch in flour provides most of the sugar for fermentation, and the starch must be broken down into sugar before it can be fermented. This breakdown is the work of enzymes.

An enzyme is defined as a large molecule, usually a protein, that catalyzes a biological reaction. This means that the enzyme speeds up the reaction by reducing whatever energy barrier is preventing the reaction from happening quickly and easily.

When two molecules bump into each other, there is a chance they will react to form new molecules. Sometimes this happens easily?the two molecules each have an unstable site, for example, and when they bump, a bond forms between the sites, creating a new, stable molecule. In other cases, however, bonds in the reacting molecules must break (which requires energy) before new bonds can form. The amount of energy needed to break the old bonds is the energy barrier to the reaction. This is represented by the solid line in the diagram below.

One way to increase the speed of a reaction is to heat it up. Hotter molecules move faster; they possess more energy. When two of them collide, there is a greater chance that the necessary bonds will break and reaction will occur. If more molecules possess the energy needed to get over the barrier, more of the reaction occurs.

The other way to speed up a reaction is to reduce the barrier, as shown by the dashed line in the diagram. When less energy is needed for the reaction, more molecules will possess enough energy to get over the barrier. Reducing the barrier is the job of catalysts. They alter the situation to reduce the barrier to reaction. Enzymes are a subset of catalysts; they work on biological reactions. About 4000 reactions are known to involve enzymes, including most of the reactions that occur in the human body and several reactions in bread dough, described next.

Enzymes catalyze three main reactions in bread-making: breaking starch into maltose, a complex sugar; breaking complex sugars into simple sugars; and breaking protein chains. The breakages could happen without enzymes, but the energy barrier is so large that it is very unlikely. Essentially, the enzymes are necessary for the reactions to occur.

It is easy to start seeing enzymes as little critters that come in, recognize the site where they can work, and begin to chew on bonds or snap them in half. While this is a convenient picture, it does a disservice to the marvels of biology. Enzymes do not think or act, but still manage to arrive at the sites where they are needed. Each enzyme has a very specific job to do and only interacts with the appropriate molecules for which it is designed, ignoring all others. Enzymes work efficiently and are not used up by the process; after the reaction occurs, the original enzyme molecule is left intact and can proceed to a new site.

If the enzyme does not think, how does it manage to perform its specific task? The simplified picture presented in general chemistry textbooks is called the ?lock and key model.? An enzyme has a specific shape that fits together with the substrate, the molecule on which it will be working. The enzyme bonds to the substrate with a weaker chemical bond, a hydrogen bond or hydrophobic bond, for example. It alters the substrate in a way that makes reaction favorable. Once reaction occurs, the enzyme releases the products and moves on.

For example, the substrate sucrose is a complex sugar that can react with a water molecule to form two simple sugar molecules, glucose and fructose.

There is an energy barrier to the reaction because it takes a lot of energy to break the middle bond of the sucrose.

The enzyme sucrase fits together with the sucrose (below). In order to bond to the enzyme, the sucrose must stretch. This stretching weakens the sucrose?s middle bond, which becomes susceptible to attack by water molecules. The energy barrier has been lowered. When a water molecule comes along, the middle bond easily breaks and reacts with the water molecule. The enzyme is now holding the product molecules, which it releases. Sucrose has been broken into glucose and fructose.

Another example emphasizes the bonding nature of the enzymes; they are not simply fitting into substrates like puzzle pieces, snapping into place. Bonds must form. Once bonded, the active site of the enzyme is positioned near the reaction site of the substrate, which it alters to reduce the energy barrier.

In this example, the substrate is a protein. Proteins are chains of amino acids linked by peptide bonds. When a peptide bond forms, a water molecule is released.

A water molecule can come back and break a peptide bond, but it usually does not have enough energy.

The enzyme carboxypeptidase catalyzes the breaking of the last peptide bond in the protein chain, releasing the end amino acid. Carboxypeptidase contains a zinc atom with a positive charge. This zinc atom bonds with the protein near the last peptide bond, pulling the electrons of the bond away from it and, thus, weakening it (below). The enzyme also has a pocket area composed of hydrophobic atoms; if the terminal amino acid has a hydrophobic group on it, the group is attracted to this pocket and held by it. In addition, carboxypeptidase can form hydrogen bonds with the terminal amino acid, further securing it in place.

When a water molecule encounters the weakened peptide bond, it likely now has enough energy to break it, recombining with the broken ends to reform the loose amino acid. The various bonds holding the enzyme to the protein substrate are weakened, and the enzyme is released.

The first enzyme to take action in bread dough is amylase. Amylase acts on starch (either amylose or amylopectin), breaking the starch chain between adjacent sugar rings. There are two kinds of amylase: ?-amylase (alpha-amylase) randomly breaks the chain into smaller pieces while ?-amylase (beta-amylase) breaks maltose units off the end of the chain.

Amylase is found in flour. Wheat kernels contain amylase because they need to break starch down into sugar to use for energy when the kernels germinate. The amount of amylase varies with the weather and harvesting conditions of the wheat, so mills generally test for it and add extra or blend flours to get an appropriate amount.

Amylases are mobilized when water is added to the flour. This is one reason why doughs with a higher hydration often ferment faster?the amylases (and other enzymes) can move about more effectively. To reach the starch molecules, amylases must penetrate the starch?s granules; thus, most of the action in bread dough happens at broken granules, where the starch is available for reaction. Fortunately, a percentage of starch granules are damaged during milling and accessible by the amylases.

An amylase is a big molecule, with hundreds of amino acids linked together. Many different groups contribute to the bonding between the amylase and the starch substrate. In addition, there are several different amylase molecules, and each functions differently. The examples of enzyme action presented above give the general idea.

Because of amylase, some of the starch in bread dough is broken into maltose, a double-ring sugar composed of two glucose molecules; but fermentation reactions require single glucose rings. Simple sugars like glucose also provide flavor to the bread and participate in browning reactions that occur at the crust during baking.

Fortunately, the yeast used in bread-making contains the enzyme maltase, which breaks maltose into glucose. When the yeast cell encounters a maltose molecule, it absorbs it. Maltase then bonds to the maltose and breaks it in two. Yeast cells also contain invertase, another enzyme that can break sucrose, like the sucrase described above. This enzyme works on the small percentage of sucrose found in the flour. These two enzymes are responsible for producing much of the glucose needed by the yeast for fermentation.

The other major enzyme at work in bread dough is protease. Protease acts on protein chains, breaking the peptide bonds between amino acids. Carboxypeptidase, described above, is an example of a protease. There are hundreds of proteases, but only a few are found in bread dough, where they chop the gluten into pieces. Proteases occur naturally in flour, yeast cells, and malt. Their levels are measured at the mill and adjusted in the same way that amylase levels are adjusted.

Proteases in bread dough have been the subject of scientific research for the past hundred years. There has been much debate about their importance. In the early years, scientists were trying to prove their existence and measure relative activity in different brands of flour. They amplified the protease activity by adding non-gluten substrates to the mix. These substrates were ones that protease readily attacks. Eventually someone thought to look at protease activity in normal bread dough and found very little activity.

It seems, however, that this very small activity might be just what is needed in bread dough. Too much protease activity would break up the gluten, destroying the network that forms during kneading. A little bit, however, softens the dough and makes it more workable. If the dough is allowed to autolyse (i.e., rest) or if preferments are used, proteases have time to work before kneading, making the dough easier to knead. (I wonder if this is the origin of the word ?autolyse,? from ?autolysis,? which means ?self-breaking? and could refer to the protein proteases at work on the protein chains.)

In addition to affecting the dough?s consistency, proteases affect its flavor. Proteases result in single amino acids when they break the last peptide bond of the protein chain. These amino acids can participate in the flavor and browning reactions that occur at the crust during baking.

So now, my simplified diagram of the chemical reactions in bread dough looks more like this:

This diagram includes the presence of enzymes. Without enzymes, bread-making would not be possible. Then again, neither would we.

'Liberal Arts' review: Another midlife crisis follows 'manic pixie ...

What hath Zach Braff wrought? It seems as if, after the success of the erstwhile "Scrubs" star's 2004 film "Garden State," sitcom actors have been given relatively free rein to indulge their "but what I really want to do is direct" dreams. The latest beneficiary of this harmless but less-than-edifying trend is Josh Radnor, who apparently is the guy on TV's "How I Met Your Mother" who's not Neil Patrick Harris. Or Jason Segel. Or Alyson Hannigan.

For his second stab at triple-threat-dom, following 2010's "Happythankyoumoreplease," Radnor has written, directed and starred in "Liberal Arts." He's Jesse, a 35-year-old admissions counselor in New York who returns to his bucolic alma mater in Ohio for the retirement party of his favorite professor (Richard Jenkins). There, he meets the luminous Zibby (Elizabeth Olsen), a 19-year-old sophomore, and their intellectual, epistolary friendship threatens to become something more, which makes Jesse feel even more awkward than he usually does.

This is yet another version of the "manic pixie" scenario, in which an unconventional, smart, pretty, young female is the (generally platonic) avenue to enlightenment for a disenchanted older male. Instead of buying a Corvette during their midlife crises, men these days just spend a few days pouring their hearts out to Zooey Deschanel in a coffee shop. More convincing are the performances from Jenkins and Allison Janney, as another of Jesse's old profs. Both these pros bring more depth to their supporting characters than either of the promising, but, alas, young, leads do to theirs.

Google Nexus 7 For $99 - Business Insider

Google is working on a new model of its well-received Nexus 7 tablet that will cost $99, according to a DigiTimes report. The tablet is said to launch in the fourth quarter of this year.

There will also be a $199 model of the device, according to the report. (The current Nexus 7 also starts at $199.)

The timing lines up with Apple's expected release of a smaller iPad, the so-called iPad Mini. Apple has all but confirmed it will announce the iPad Mini at a press event in October. Many think the iPad Mini will be priced around $250.

Today's $199 Nexus 7 is a great tablet. If Google can find a way to offer the same experience for just $99, it's going to be tough for people to pass up.

Asus, the company that makes Google's Nexus 7 tablet, denied the report.

Malaysia: Private developers must join government in building ...

It is projected that by 2020 the Greater Kuala Lumpur area population will rise from 4.5 million people to 10 million. The Business Times reports developers are signing on in support of participating in affordable housing building programs in order to create enough for middle-income families.

If the average household in the country has four people, this will mean there is a need to build 150,000 new houses a year, and this is compared to the only 200,000 new and old homes combined sold nationwide last year. In addition, recently the Selangor state government imposed a 30 percent development charge on all improvements that it has allowed on any development land. This, in combination with increasing costs in materials and labour, is also driving up the cost of what housing is being built across the country.

Real Estate and Housing Developers? Association (Rehda) deputy president Datuk FD Iskandar told the Business Times he sees a lot of support by developers to meet the demand for quality affordable housing and that the 1Malaysia Housing Programme (PR1MA) established by the government ?cannot do it alone.?

?We are willing to cooperate with them,? he says.

Iskander also points to the Selangor State Economic Development Corporation (PKNS), established in the 1970s, and calls on them to meet what he says was their initial goal to build affordable housing.

?Sadly today, PKNS is selling houses that are priced at more than RM1 million (US$326,370),? says Iskander. ?Where is their social responsibility? They get cheap land while private developers pay at market rate. On top of that, PKNS gets other benefits, yet they are building expensive houses.?

Iskandar, who is also Glomac Bhd group managing director, says PR1MA can be the facilitator of projects to build affordable homes by private developers, ?as it has the list of first-time home buyers.?

He further says the federal and state governments could also identify pockets of land in their respective areas to be tasked to private developers to build affordable homes.

?The authorities can even stipulate that these developments must have as high as 50 percent affordable units,? Iskander adds.

In this respect, the Business Times says PKNS has a ?crucial role to play? as it still has plenty of land to be developed.

?The state must do its part in solving the housing woes of the rakyat, especially the middle-income,? writes columnist Khaidir A Majid.

This perception is supported by Iskander.

?The high-income earner has no problems buying houses. So too for the lower-income earners who are entitled for low-cost houses,? Iskander explains. ?It is the middle-income group which is feeling the pinch.?

However, Iskandar says buyers must also change their mindset in choosing housing location.

?You cannot expect to buy an affordable unit in Bangsar (Kuala Lumpur) at RM300,000. An affordable unit there might be RM1 million, while those in Shah Alam RM400,000 and Rawang RM300,000,? he says.

The Business Times says private developers are already building affordable houses in some areas, but many of these developments are remote from Kuala Lumpur where land is cheaper. However, public transit is being extended with the federal government currently building multi-billion ringgit Light Rail Transit (LRT) and Mass Rail Transit (MRT) systems.

Singer Sarah Brightman to Make 'Groundbreaking' Space Travel Announcement

Famed soprano singer Sarah Brightman will make a 'groundbreaking announcement' about space travel next month, according to the U.S. space tourism company Space Adventures.

Brightman will hold a press conference in Moscow Oct. 10 at 4:00 p.m. Moscow time (8:00 a.m. EDT). She will appear with UNESCO Artist for Peace Mikhail Gendelev and Eric Anderson, chairman of the Virginia-based firm Space Adventures.

Space Adventures has brokered deals to send seven private citizens aboard Russian spacecraft to the International Space Station. These space tourists typically train extensively in Russia before their trips, and spend about two weeks in Earth orbit. Their ticket prices have ranged from about $20 million for the first traveler, American investor Dennis Tito, in 2001, to $35 million for the most recent space tourist, Canadian circus-founder Guy Laliberte, in 2009.

There is no word yet on whether Brightman herself will become the next private space traveler, or if her collaboration with Space Adventures involves some other project altogether.

Available seats on Russian Soyuz spacecraft have been scarce lately, as that vehicle is the only transportation for astronauts to the space station in the wake of last year's retirement of NASA's space shuttles.

However, a source within the Russian space agency told state news agency Interfax that seats may open up to space tourists on flights in 2015 when professional astronauts and cosmonauts start serving year-long tours of duty aboard the station.

Brightman, a native of England, is "the world's biggest selling soprano," according to Space Adventures, and sings with a vocal range spanning three octaves. She has topped both the Billboard dance and classical music charts, and performs around the world.

"Sarah's work transcends any specific musical genre, synthesizing many influences and inspirations into a unique sound and vision," according to a Space Adventures statement. "She remains among the world?s most prominent performers, with global sales of 30 million units having received more than 180 gold and platinum awards in over 40 countries."

This year, Brightman is serving as a UNESCO "Artist For Peace" Ambassador, and is working on a new record to be released in late 2012.

Singer Andy Williams dies at age 84

(Reuters) - Andy Williams, who charmed audiences with his mellow delivery of songs like "Moon River" and "Can't Take My Eyes Off of You" in the 1950s and 60s, has died at his home in Branson, Missouri, his family said Wednesday. He was 84.

The blue-eyed Williams, who continued touring and drawing crowds to his Moon River Theater in the music hub of Branson into his 80s, died on Tuesday evening after a yearlong battle with bladder cancer, his family said in a statement.

Williams had 18 gold record and three platinum hits and in his peak years was a regular on television with his own variety series.

President Ronald Reagan called his voice "a national treasure."

Williams was born on December 3, 1927, in tiny Wall Lake, Iowa, and was singing professionally with three older brothers at age 8. The Williams Brothers had steady work on radio and even sang back-up on Bing Crosby's 1944 hit "Swinging on a Star."

Williams went solo after the group broke up in 1951, drew attention with his appearances on "The Tonight Show" and began recording. His first No. 1 hit, "Butterfly," came in 1957.

Later hits included "Born Free," "Days of Wine and Roses," "The Shadow of Your Smile," "Can't Get Used to Losing You," "Solitaire," "Music to Watch Girls By," "Can't Take My Eyes Off of You" and the theme from the 1970 movie hit "Love Story."

He came upon his signature song when asked to sing ?"Moon River" at the 1962 Academy Awards ceremony. Audrey Hepburn had performed the song in the movie "Breakfast at Tiffany's."

"I still love it, as many times as I've done it," Williams told a British newspaper in 2007. "It has a great melody and wonderful lyrics. It's not a bad song to have. It could have been 'Itsy Bitsy Teeny Weeny Yellow Polka Dot Bikini.' We forgot to do it one night and 27 people wanted their money back."

Williams' first wife was Claudine Longet, a Folies Bergere dancer he married in 1961, and they had three children before divorcing. After their split, Williams supported Longet when she was charged with fatally shooting her boyfriend, skier Spider Sabich, in 1976 in Colorado. She was convicted of negligent homicide after claiming the gun went off accidentally.

FIXTURE ON CHRISTMAS SPECIALS

In 1992, Williams built his own 2,000-seat dinner theater in Branson, a city of 10,000 people that had become a regional entertainment center featuring more than 30 theaters, most of which cater to country music acts. He performed there about 20 weeks a year while also putting on a Christmas tour in the United States and occasional tour of Britain.

Williams was a Christmas fixture on U.S. television, dressed casually in a trademark sweater, and he recorded several Christmas albums. In 2006 the American Society of Composers, Authors and Publishers ranked his "Let It Snow! Let It Snow! Let It Snow" as the sixth most frequently performed Christmas song and "It's the Most Wonderful Time of the Year" as No. 11.

Williams had a strong following in Britain, where his career was revived in the late 1990s when ?"Can't Take My Eyes Off of You" and "Music to Watch Girls By" were used in television commercials.

In 1991, Williams married Debbie Haas and they lived in Branson and La Quinta, California.

Williams was a close friend of the powerful Kennedy political family and sang "The Battle Hymn of the Republic" at Robert F. Kennedy's funeral after the U.S. senator from New York was assassinated during the 1968 presidential campaign.

Williams' love of golf was so intense that for several years he hosted a professional tournament that bore his name.
